Die Eier zugeben und etwa 3 Minuten kr\u00e4ftig r\u00fchren, bis der Teig von glatter, z\u00e4her Konsistenz ist und in dicken Tropfen vom L\u00f6ffel f\u00e4llt. Bei Bedarf noch etwas Milch zugeben. Zugedeckt 30 Minuten ruhen lassen. Den K\u00e4se grob reiben oder in feine W\u00fcrfel schneiden. Die Zwiebeln sch\u00e4len und in m\u00f6glichst d\u00fcnne Ringe schneiden. Ofen auf 200\u00b0C vorheizen. In einem gro\u00dfen Topf reichlich Salzwasser zum Kochen bringen. Die Sp\u00e4tzle mit Hilfe eines Sp\u00e4tzlehobels oder einer Sp\u00e4tzlepresse ins Wasser geben oder vom Brett schaben. 1-2 Minuten kochen, bis sie an die Oberfl\u00e4che steigen. Mit einem Schauml\u00f6ffel herausheben, abtropfen lassen und in Lagen mit dem K\u00e4se in eine vorgew\u00e4rmte Sch\u00fcssel schichten. Jede Lage pfeffern. Im Ofen (Gas 3-4; Umluft 180\u00b0C) den K\u00e4se schmelzen lassen. Die Zwiebelringe in der hei\u00dfen Butter knusprig braten. Mit der Butter \u00fcber die Sp\u00e4tzle geben.
