Petersilie, Basilikum und Dill) <br \/>\n40 g Butterschmalz<br \/>\neinige Zweige Petersilie<br \/>\n2 Zitronen zum Garnieren<\/p>\n<p>\n<b>Zubereitung: <\/b> Die Forellen innen und au\u00dfen unter flie\u00dfendem kalten Wasser gr\u00fcndlich waschen. Innen und au\u00dfen mit K\u00fcchenpapier gr\u00fcndlich trockentupfen, mit dem Zitronensaft betr\u00e4ufeln und kr\u00e4ftig mit Salz und Pfeffer einreiben. Das Mehl auf einer l\u00e4nglichen Platte verteilen und die vorbereiteten Fische darin wenden. \u00dcbersch\u00fcssiges Mehl mit der Hand von den Forellen abklopfen. Die Kr\u00e4uter waschen, mit K\u00fcchenpapier gr\u00fcndlich trockentupfen und die Bl\u00e4tter mit den Stielen grob zerkleinern. Gleichm\u00e4\u00dfig in die Bauch\u00f6ffnungen der vorbereiteten Forellen f\u00fcllen. Die H\u00e4lfte des Butterschmalzes in eine gro\u00dfe Pfanne geben und erhitzen. Zwei Forellen hineinlegen und auf jeder Seite in etwa 5 Minuten knusprig braten. Die Forellen sind gar, wenn die Augen wei\u00df hervortreten und die R\u00fcckenflossen sich ohne Widerstand herausziehen lassen. Im Ofen warm halten, w\u00e4hrend man die restlichen Forellen wie oben beschrieben br\u00e4t. Die Forellen auf vorgew\u00e4rmten Tellern anrichten und mit dem Bratfett begie\u00dfen.
