Zu einer Kugel formen, in Folie wickeln und ca. 1 Stunde im K\u00fchlschrank ruhen lassen. Die Rosinen mit Rum begie\u00dfen. Die \u00c4pfel halbieren, sch\u00e4len, vom Kerngeh\u00e4use befreien und mehrmals l\u00e4ngs einschneiden. Den Zitronensaft und den Zimt mischen und die Apfel damit betr\u00e4ufeln. Eier trennen. Die Eiwei\u00dfe steif schlagen. Eigelbe, Zucker, Quark, Puddingpulver und Creme fraiche vermengen. Das Eiwei\u00df vorsichtig unter die Masse heben. Ofen auf 200\u00b0C vorheizen. Form buttern eventuell mit etwas Grie\u00df bstreuen, so l\u00f6st sich nachher die Torte besser). Teig ausrollen, in die Form legen. 10 Minuten (Gas 3-4; Umluft 180\u00b0 C) backen. Creme in den Teig gie\u00dfen, \u00c4pfel und abgetropfte Rosinen daraufgeben. 35 Minuten bei 180\u00b0 C backen.
