Kalbsfond<br \/>\n1\/8 Ltr. Trockener Wei\u00dfwein<br \/>\n1 EL Creme fraiche<br \/>\n2 TL Zitronensaft<br \/>\nZahnstocher<\/p>\n<p>\n<b>Zubereitung: <\/b><br \/>\nDen K\u00fcrbis putzen, sch\u00e4len und fein raspeln. Petersilie fein hacken, mit den K\u00fcrbisraspeln und dem Kalbsbr\u00e4t gut mischen. Mit Salz und Pfeffer abschmecken. Die Kalbschnitzel flacher dr\u00fccken, gleichm\u00e4\u00dfig mit K\u00fcrbismasse bestreichen, dabei rundherum einen kleinen Rand freilassen. R\u00e4nder nach innen klappen, Schnitzel feststecken und die R\u00f6llchen au\u00dfen salzen und pfeffern. Fr\u00fchlingszwiebeln putzen, waschen und l\u00e4ngs halbieren. \u00d6l in einer Pfanne zerlassen und die R\u00f6llchen darin rundherum braun braten und wieder herausnehmen. Die Zwiebelh\u00e4lften im verbliebenen Fett and\u00fcnsten, mit Fond und Wein aufgie\u00dfen und die R\u00f6llchen darin zugedeckt bei schwacher Hitze ca. 20 Minuten schmoren. Die \u00fcbrige Petersilie fein hacken, R\u00f6llchen aus der Sauce nehmen und mit Creme fraiche einr\u00fchren und die Sauce nach Wunsch etwas einkochen lassen. Mit Salz, Pfeffer und Zitronensaft w\u00fcrzen und mit den R\u00f6llchen servieren.
