Perlzwiebelchen oder junge Zwiebeln, gesch\u00e4lt oder einen gro\u00dfe wei\u00dfe Zwiebel, gehackt<br \/>\n450 g junge Erbsen, frisch oder TK oder Zuckererbsenschoten<br \/>\n2 Tassen Spanische Salatherzen, gehackt<br \/>\n1\/2 Tasse Minzebl\u00e4tter, gehackt<\/p>\n<p>\n<b>Zubereitung: <\/b><br \/>\n1. Speckw\u00fcrfel auf mittlerer Hitze im Oliven\u00f6l auslassen und kross braten, dann mit einem Schauml\u00f6ffel aus der Pfanne heben.<br \/>\n2. Fisch im verbliebenen Speckfett schnell braun anr\u00f6sten &#8211; nur ein paar Min\u00fctchen je Seite. Dann den Fisch mit Salz und Pfeffer w\u00fcrzen, aus der Pfanne nehmen und beiseite stellen.<br \/>\n3. Zwiebelchen in die Pfanne geben und 5 min sautieren (evtl. noch etws Butter oder \u00d6l erg\u00e4nzen), bis sie weich sind, dabei hin und wieder umr\u00fchren. Erbsen und den gehackten oder kleingeschnittenen Salat dazugeben und kurz durchr\u00fchren, bis das Gem\u00fcse sch\u00f6n gl\u00e4nzt. Etwas salzen und pfeffern. Fisch auf das Gem\u00fcse betten, Hitze reduzieren, Pfanne zudecken und den Fisch garziehen lassen. Zur Garprobe ein Messer mit d\u00fcnner Klinge in den dicksten Fischabschnitt stecken, es sollte so gut wie kein Widerstand versp\u00fcrbar sein. <br \/>\n4. Fisch auf eine Servierplatte geben. Speckw\u00fcrfelchen und Minze in das Gem\u00fcse r\u00fchren.
