P\u00fcriert man den Fisch zu fein, klebt er beim Frittieren nicht zusammen, ist er zu grob, verh\u00e4rten sich die St\u00fccke beim Frittieren zu schrotartigen K\u00fcgelchen. Salzen Sie die Fischkrumen eher zu stark, denn das Salz entwickelt sich beim Frittieren und gibt dem Fisch einen kr\u00e4ftigen Geschmack.<\/div><\/li><li id=\"wprm-recipe-6593-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Nun im Wok reichlich \u00d6l auf mittlere Temperatur erhitzen. Die Temperatur muss stimmen: zu hei\u00df, und der Fisch verbrennt, zu kalt, und das im Fisch enthaltene Kollagen gart nicht schnell genug, um die Fischfasern zusammenzuhalten.<\/div><\/li><li id=\"wprm-recipe-6593-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Immer nur eine kleine Hand voll \u00bbKrumen\u00ab auf einmal frittieren. Auch hier Vorsicht: Nimmt man zu viel auf einmal, k\u00fchlt das \u00d6l zu stark ab, und das Kollagen bindet nicht, oder die Pl\u00e4tzchen saugen sich voll \u00d6l. Nimmt man zu wenig, verbrennt der Fisch, oder die Pl\u00e4tzchen geraten zu kr\u00fcmelig. Eine kleine Hand voll ins m\u00e4\u00dfig hei\u00dfe \u00d6l streuen. Wenn es nicht mehr sch\u00e4umt, die Krumen von der \u00e4u\u00dferen Seite des Woks in die Mitte schieben. Dann von der inneren Seite zur Mitte schieben. Das Kollagen sollte die Fischpl\u00e4tzchen jetzt zusammenhalten, und sie sollten riechen, als seien sie gar.
