Die Butter mit dem Puderzucker, dem Eigelb und einer Prise Salz leicht verr\u00fchren. Die Orangen und die Zitronenschale dazugeben. Das Mehl daraufsieben und alle Zutaten zu einem glatten Teig verarbeiten. In Klarsichtfolie wickeln und mindestens 1 Stunde k\u00fchl stellen. Den M\u00fcrbeteig auf einer bemehlten Arbeitsfl\u00e4che 3mm dick ausrollen. Den Springformboden ausfetten, den Teig darauflegen. mit dem Springformrand ausstechen. Den Boden mit einer Gabel einstechen und im Ofen bei 220 Grad backen, herausnehmen und ausk\u00fchlen lassen.<br \/>\n<em>Dunkler Haselnussbiskuitboden:<\/em><br \/>\nDie Eigelbe mit 40 g Zucker schaumig schlagen. Das Eiweiss ebensfalls mit 40 g Zucker schaumig schlagen. Mehl mit St\u00e4rke, Kakaopulver und den Haseln\u00fcssen mischen. 1\/3 des Eiwei\u00df in die Eigelbmasse unterr\u00fchren. Das Mehl-Haselnuss-Gemisch und den Rest vom dem Eischnee unterheben. In eine mit Butter ausgepinselte und mit Mehl best\u00e4ubte Springform f\u00fcllen und bei 200 Grad im vorgeheizten Ofen 20-25 Minuten backen. Herausnehmen und abk\u00fchlen lassen und aus der Form nehmen.<br \/>\n<em>Belag:<\/em><br \/>\nDas Ei mit den Eigelben und dem Puderzucker \u00fcber einem hei\u00dfen Wasserbad schaumig schlagen. Saft von einer Orange und dem Abrieb von 1\/2 Orange beigeben. Die Gelatine, die in kaltem Wasser eingeweicht wurde beigeben und das Ganze auf Eis stellen, bis die Masse leicht abgek\u00fchlt ist. Den Amaretto und die Mascarponecreme einr\u00fchren und die geschlagene Sahne unterheben. Den gebackenen, ausgek\u00fchlten M\u00fcrbeteigboden mit Erdbeermarmelade d\u00fcnn bestreichen. Den Haselnussbiskuitboden waagerecht in zwei Teile schneiden. (Wenn der Tortenboden einen Tag fr\u00fcher gebacken wird, l\u00e4sst er sich besser schneiden.) Den ersten Teil vom Haselnussbiskuit auf den M\u00fcrbeteig setzen, mit einem Tortenring umstellen und den Boden mit einem Teil der Espresso-Puderzucker- Mischung tr\u00e4nken. Die H\u00e4lfte der Mascarponef\u00fcllung einf\u00fcllen, den zweiten Haselnussboden, der mit dem Rest der Espresso-Puderzucker-Mischung getr\u00e4nkt wurde, daraufsetzen und den Rest der Masse einf\u00fcllen. Das Ganze f\u00fcr 2-3 Stunden kalt stellen. Anschlie\u00dfend den Tortenring mit einem Messer vorsichtig l\u00f6sen und den Ring abziehen.
