Das Eigelb mit 80 g Zucker und 100 ml Schlagsahne in einem Topf mit den Quirlen des Handr\u00fchrers bei milder Hitze bis kurz unter dem Siedepunkt dicklich-cremig aufschlagen, aber nicht kochen lassen. Von der Kochstelle nehmen und im Eiswasserbad kalt schlagen. 225 g weiche Butter in kleinen St\u00fccken nach und nach mit dem Schneidstab unterr\u00fchren. Die Creme kalt stellen. 2 Backbleche mit Backpapier auslegen. Das Eiwei\u00df aufschlagen, nach und nach 120 g Zucker einrieseln lassen und zu steifem Schnee schlagen. Nach und nach 200 g gemahlene Mandeln locker unterheben. Mit einer Palette aus der H\u00e4lfte der Masse einen runden, gleichm\u00e4\u00dfig dicken Tortenboden von 22 cm Durchmesser streichen. Ein Backblech auf der 2. Einschubleiste von oben, das 2.Blech auf die 1. Einschubleiste von unten schieben. Die Bleche nach 10 Minuten wechseln und die B\u00f6den nochmals 10 Minuten backen. Das Backpapier von den Blechen ziehen. Auf jedes Blech 20 g Zucker streuen, die B\u00f6den daraufst\u00fcrzen und das Papier abziehen. Kalt werden lassen und einen Boden mit der H\u00e4lfte der Creme bestreichen. Den zweiten Boden darauflegen und die Torte oben und am Rand mit der restlichen Creme bestreichen. Die Mandelbl\u00e4ttchen auf der Creme verteilen und 6 Stunden kalt stellen.
