Es war schon vor 3000 Jahren das Hauptnahrungsmittel der mittelamerikanischen Kulturen. Die Getreidepflanzen haben einen Saatkopf mit wenig Seitenzweigen, der bis zu 50 cm lang wird. Der Samen ist kaum gr\u00f6sser als ein Senfkorn, ist cremefarben, golden oder rosa. Eine Pflanze bringt ungef\u00e4hr 50.000 Samenk\u00f6rner hervor. Amaranth hat einen Proteingehalt von ca. 17% (Weizen nur 12-14%, Reis 7-10% und Mais 9-10%). Verglichen mit anderen Getreidearten ist der Gehalt der essentiellen Aminos\u00e4ure Lysin ebenfalls sehr hoch 9,28%). Der N\u00e4hrwert des Amaranth Proteins liegt bei 75%. Der Vergleich mit Milch (73%), Gerste (62%), Weizen (56%) und Mais (44%) zeigt den hohen Grad biologischer Verwertbarkeit des Proteins. Aus Amaranth macht man z.B. Suppen, Kl\u00f6sse, Pfannkuchen, verschiedene Backwaren oder eben gepufften Amaranth, der einen nussigen Geschmack hat. Amaranth und Wasser zusammen in einen Topf geben und aufkochen. Den Topf dann zudecken und ca 20 Min. auf kleiner Flamme weiter k\u00f6cheln lassen. Den Herd ausschalten und weitere 20 Minuten Quellen lassen.
