Gleichzeitig die Flanf\u00f6rmchen kurz im Backofen auf der Saftpfanne bei 100 Grad erw\u00e4rmen. Dann den Karamel mit einem L\u00f6ffel auf dem Boden der F\u00f6rmchen verteilen.  Butter in einem kleinen Topf aufsch\u00e4umen lassen. Zimt unterr\u00fchren  und ganz kurz erhitzen. Milch zugie\u00dfen und nur lauwarm werden lassen.  Eier, Eigelb, Salz und 75 g Zucker in einer R\u00fchrsch\u00fcssel vermischen. Zimt-Milch zugie\u00dfen und alles so lange r\u00fchren, bis sich der Zucker aufgel\u00f6st hat.  Eiermilch in die F\u00f6rmchen gie\u00dfen und auf der Saftpfanne des Backofens auf die 2. Einschubleiste von unten stellen. 1,5 Liter kochendes Wasser in die Saftpfanne gie\u00dfen. Bei 175 Grad etwa 45 bis 50 Minuten garen: die Creme sollte gestockt sein. F\u00f6rmchen aus dem Wasserbad nehmen, abk\u00fchlen lassen und \u00fcber Nacht kalt stellen. F\u00fcr die Sauce restlichen Zucker zu goldbraunem Karamel schmelzen lassen. Kirschsaft zugie\u00dfen und so lange kochen, bis sich der Karamel wieder aufgel\u00f6st hat. Rosinen unterr\u00fchren. Speisest\u00e4rke in 3El kaltem Wasser anr\u00fchren und mit der Sauce vermischen. Kurz aufkochen, bis die Sauce klar ist, abk\u00fchlen lassen und ebenfalls \u00fcber Nacht kalt stellen. Am n\u00e4chsten Tag kurz vor dem Servieren die Mandeln l\u00e4ngs halbieren. Feigen h\u00e4uten und vierteln. Flans auf Portionsteller st\u00fcrzen. Sauce auf den Tellern verteilen und mit Mandeln bestreuen.
