Dann durch ein Sieb absch\u00fctten und kalt absp\u00fclen.<br \/>\nDie Safranf\u00e4den in ca. 5 EL warmem Wasser einweichen und mit dem Safranwasser einen Teil des Reis f\u00e4rben.<br \/>\nButterschmalz in den Topf geben und den abgetropften Reis wieder hinzugeben, den gelben Reis untermischen.<br \/>\nDen Topf gut schlie\u00dfen (evtl. den Deckel mit einem Geschirrtuch umwickeln) und den Reis bei kleinster Hitze im Dampf fertig garen. Dabei entsteht eine Kruste am Boden (tahdig).<br \/>\nIn der Zwischenzeit die Berberitzen gut waschen und einige Minuten in kaltem Wasser einweichen. Anschlie\u00dfend in einer Pfanne in Butterschmalz and\u00fcnsten.
