Nehmen Sie den ungemahlenen Safran, und zermahlen Sie ihn zusammen mit einem halben TL Zucker und kippen Sie dann eine halbe Tasse kochendes Wasser hinzu, dann stehenlassen. Den Butter schmelzen Sie in einem gro\u00dfen Topf und geben dann das Mehl dazu. Vorsicht, nicht zu hei\u00df werden lassen, sonst brennt Butter und Mehl an. Jetzt sch\u00fctten Sie eine halbe Tasse hei\u00dfes Wasser dazu und r\u00fchren solang, bis der Brei keine Klumpen mehr hat. Ofen auf geringe Hitze stellen und die Datteln dazugeben und ordentlich dr\u00fccken und kneten. Wenn<br \/>\ndie Masse zu fest wird, ein wenig kaltes Wasser hineinsch\u00fctten. Ist der Brei gut geknetet, das Rosenwasser und den Safranaufgu\u00df hinzugeben und nochmal kr\u00e4ftig durchkneten.
