In einem Topf ca. 2 l Wasser mit<br>dem Suppengem\u00fcse, Pfefferk\u00f6rnern, Senfsaat, Lorbeerblatt und dem<br>P\u00f6kelsalz aufkochen. Die B\u00e4ckchen zugeben und ca. 50 Minuten leise<br>k\u00f6cheln lassen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Zwiebel und Knoblauch sch\u00e4len, fein w\u00fcrfeln und in einem Topf mit 1 EL<br>Traubenkern\u00f6l anschwitzen. Speck zugeben, mit Wei\u00dfwein abl\u00f6schen und<br>diesen um die H\u00e4lfte einkochen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Kartoffel sch\u00e4len, mit Rinderbr\u00fche und Lorbeerblatt zum Ansatz geben und<br>alles ca. 30 Minuten k\u00f6cheln lassen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In der Zwischenzeit den Feldsalat putzen, waschen und abtropfen lassen.<br>Toastbrot in 1 cm gro\u00dfe W\u00fcrfel schneiden, in einer Pfanne mit Butter<br>goldbraun anr\u00f6sten und auf K\u00fcchenkrepp abtropfen lassen. Pinienkerne in<br>einer Pfanne ohne Fett r\u00f6sten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wenn die Kartoffel weich gekocht ist, das Lorbeerblatt aus dem Topf<br>nehmen. Senf , Essig und Sonnenblumen\u00f6l zugeben und mit einem P\u00fcrierstab<br>zu einem s\u00e4migen Dressing aufmixen. Mit Salz, Pfeffer und einer Prise<br>Zucker abschmecken und abk\u00fchlen lassen. Tomate kurz in hei\u00dfes Wasser<br>geben, herausnehmen und die Haut abziehen. Tomate vierteln, die Kerne<br>ausstreichen und in feine W\u00fcrfel schneiden. Kr\u00e4uter absp\u00fclen, trocken<br>sch\u00fctteln und fein hacken. Eier ebenfalls fein hacken. Eier, Kr\u00e4uter und<br>Tomate unter das erkaltete Dressing mischen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Feldsalat in einer Sch\u00fcssel mit dem Dressing marinieren. Marinierten<br>Feldsalat in tiefen Tellern anrichten, Pinienkerne, ger\u00f6stete Brotw\u00fcrfel<br>und etwas Kresse \u00fcber den Salat geben. Die Schweinebacken aus dem Sud<br>nehmen und rund herum anlegen.
