Brustkorb-Kn\u00f6chlein zusammen mit fein gehackten Kalbsbrustknochen und Suppengem\u00fcse zu einem Saucenfond auskochen. Dazu das klein gehackte Suppengem\u00fcse mit Schalotte und Knochen anbraten, mit Wasser oder Wei\u00dfwein abl\u00f6schen und alles gut durchkochen. Den so entstandenen Fond w\u00fcrzen, absieben und wieder auf den Herd stellen.<br \/>\nZimtbl\u00fcten zugeben, reduzieren, passieren und mit Butter abbinden. Wachtelbr\u00fcstchen und Keulen von allen Seiten 7 Minuten lang bei geringer Hitze braten, auf Chicoree anrichten und mit stark reduzierter Sauce betr\u00e4ufeln.<br \/>\nGratin von gebratenem Chicor\u00e9e:<br \/>\nChicor\u00e9e halbieren, Strunkansatz keilf\u00f6rmig herausschneiden und die Bl\u00e4tter in 2 cm grosse Rauten schneiden. Kartoffeln kochen, pellen und in d\u00fcnne Scheiben schneiden. Chicor\u00e9e in Butter anbraten, salzen, pfeffern, leicht br\u00e4unen, etwas Zucker zu geben, mit 3-4 EL Gem\u00fcsebr\u00fche abl\u00f6schen und weich d\u00fcnsten. Schalotte w\u00fcrfeln, in<br \/>\nButter anschwitzen, Lorbeerblatt und Mehl zugeben, alles gut verr\u00fchren, mit Milch und restlicher Gem\u00fcsebr\u00fche zu einer cremigen Sauce einkochen, evtl. mit etwas Butter binden und mit Salz und Muskat abschmecken, gehackten Schnittlauch untermischen. Pinienkerne in einer Pfanne ohne \u00d6l Farbe nehmen lassen. Kartoffeln, und Chicor\u00e9e abwechselnd in eine gefettete Auflaufform schichten, Sauce obenauf geben und ein paar Minuten unter dem Grill br\u00e4unen.<\/p>\n<p>Quelle:
