Das Kokosfleisch in St\u00fccke brechen und mit einem Drittel des Wassers im Mixer p\u00fcrieren. Das P\u00fcree in ein K\u00fcchentuch geben und \u00fcber einer Sch\u00fcssel gut ausdr\u00fccken. Die Kokosmilch in der Sch\u00fcssel f\u00fcr die Sauce beiseite stellen.<br \/>\nDas Bulgur mit dem restlichen Wasser und Salz aufkochen und zugedeckt etwa 20 Minuten garen. Die Zwiebel hacken. Die Pfefferschote putzen und ohne die Kerne in feine Streifen schneiden. Das \u00d6l in einer Pfanne erhitzen. Die Zwiebel, die Pfefferschote, den Tofu und das tiefgefrorene Gem\u00fcse darin bei starker Hitze unter st\u00e4ndigem Wenden anbraten, bis der Tofu leicht gebr\u00e4unt ist. Salz, das Kurkuma, den Koriander, den Zimt, Muskat, den restlichen Zitronensaft und die   Kokosmilch hinzuf\u00fcgen, aufkochen und zugedeckt bei schwacher Hitze in etwa 5 Minuten garen, bis das Gem\u00fcse gerade eben bissfest ist. Die Petersilie hacken und unter das Gem\u00fcse mischen.
