Bearbeiten<br \/>\n40 g  Zucker<br \/>\nSalz<br \/>\n1 Ei (Kl. M)<br \/>\n30 g  Butter (weich)<br \/>\n\u00d6l f\u00fcr das Blech<br \/>\n<em>Marzipancreme<\/em><br \/>\n200 g  Marzipanrohmasse<br \/>\n500 ml  Milch<br \/>\n1 Packung Mandel-Puddingpulver<br \/>\n2 EL Zucker<br \/>\n3 Eigelb (Kl. M)<br \/>\n<em>Belag<\/em><br \/>\n1,5 kg  \u00c4pfel<br \/>\n4 EL Zitronensaft<br \/>\n3 EL Mandelbl\u00e4ttchen<br \/>\n4 EL Aprikosenkonfit\u00fcre<br \/>\n250 g  Blaubeeren<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\n1. F\u00fcr den Hefeteig die Hefe in der Milch aufl\u00f6sen. Dann mit Mehl, Zucker, 1 Prise Salz, Ei und Butter mit den Knethaken des Handr\u00fchrers zu einem geschmeidigen Teig verkneten. Zugedeckt an einem warmen Ort 40 Minuten gehen lassen.<br \/>\n2. Inzwischen f\u00fcr die Marzipancreme die Marzipanrohmasse auf der groben Seite der K\u00fcchenreibe raspeln. 100 ml Milch mit dem Puddingpulver, Zucker und Eigelb verr\u00fchren. Die restliche Milch aufkochen, das anger\u00fchrte Puddingpulver zugie\u00dfen und unter st\u00e4ndigem R\u00fchren kochen. Von der Kochstelle nehmen. Marzipanmasse zugeben und r\u00fchren, bis sie sich aufgel\u00f6st hat und eine glatte Creme entstanden ist. Etwas abk\u00fchlen lassen.<br \/>\n3. Inzwischen f\u00fcr den Belag die \u00c4pfel sch\u00e4len, vierteln, entkernen und die Viertel nochmals in 2-3 St\u00fccke schneiden. In eine Schale geben und mit Zitronensaft betr\u00e4ufeln. Mandelbl\u00e4ttchen in einer Pfanne ohne Fett goldgelb r\u00f6sten.<br \/>\n4. Ein Backblech d\u00fcnn mit \u00d6l einpinseln und mit Mehl best\u00e4uben. Den Hefeteig auf einer leicht bemehlten Arbeitsfl\u00e4che auf Backblechgr\u00f6\u00dfe (40&#215;35 cm) ausrollen. Teig auf das Backblech legen, dabei die R\u00e4nder hochdr\u00fccken. Die lauwarme Marzipancreme mit einem Essl\u00f6ffel auf dem Teig verteilen und vorsichtig glatt streichen. \u00c4pfel auf der<br \/>\nMarzipancreme verteilen und dabei leicht in die Creme dr\u00fccken. Teig nochmals 10 Minuten gehen lassen. Im vorgeheizten Backofen bei 200 Grad (Gas 3, Umluft 180 Grad) auf der 2. Schiene von unten 20-25 Minuten backen.<br \/>\n5. Die Aprikosenkonfit\u00fcre erhitzen und mit einem Pinsel auf die hei\u00dfen \u00c4pfel streichen. Blaubeeren verlesen, auf dem Kuchen verteilen und mit Mandeln bestreuen. Kuchen auf einem Gitter abk\u00fchlen lassen.
