Das Stubenk\u00fcken halbieren und 12 Minuten in der Br\u00fche garen lassen. Die S\u00fc\u00dfkartoffeln sch\u00e4len, in dicke Scheiben schneiden und auf einem gefetteten Backblech auslegen. Den Parmesan reiben, dar\u00fcberstreuen und alles im Ofen ca. 15 Minuten \u00fcberbacken. Die Aubergine in Scheiben<br \/>\nschneiden und mit Oliven\u00f6l und zwei Knoblauchzehen in einer Grillpfanne goldbraun braten. W\u00fcrzen. Butter mit Mehl aufkochen lassen, mit Wei\u00dfwein abl\u00f6schen und mit ein wenig von dem Stubenk\u00fckenfond und Sahne auff\u00fcllen.<br \/>\nDie Auberginen- und Kartoffelscheiben auf einem Tellerrand anrichten. Das Stubenk\u00fcken mit der Sauce in die Mitte geben. Mit Basilikum und Zitronengras garnieren.
