Knoblauch, Ingwer und Zitronengras zugeben, kurz mitbraten. Mit Kalbs- oder H\u00fchnerbr\u00fche abl\u00f6schen, bei 175\u00b0 C zugedeckt 2 Stunden im Ofen schmoren, dabei einmal wenden. Kurz vor Garende Tomaten, Chili und Keffir Bl\u00e4tter zugeben. Mit Fischsauce, Zucker und Salz abschmecken. Gro\u00dfe Zitronengrasst\u00fccke entfernen, in einer vorgew\u00e4rmten Sch\u00fcssel mit Cilantro bestreut servieren. F\u00fcr<br \/>\ndas Risotto Schalotten in etwas \u00d6l  anschwitzen, Reis zugeben, mit \u00d6l \u00fcberziehen lassen. In 3-4 Schritten hei\u00dfe Br\u00fche zugeben, jedesmal fast einkochen lassen. Ingwer und Knoblauch mit etwas Br\u00fche fein mixen, kurz vor Garende unter das Risotto r\u00fchren.
