In einem Topf die Butter zerlassen und die Zwiebeln darin anschwitzen. Mit dem Schneckenfond aus der Dose und dem Sp\u00e4tburgunder abl\u00f6schen und bis auf ein Viertel reduzieren. Die Creme fra\u00eeche zugeben und mit dem Mixstab aufmixen. Mit Salz und Pfeffer abschmecken. Die beiseite gestellten Schnecken als Einlage geben.
