Die Pilze 15 bis 20 Minuten in 200 ml lauwarmen Wasser einweichen. Dann abtropfen lassen, etwas ausdr\u00fccken, die Stiele herausdrehen und die K\u00f6pfe in d\u00fcnne Streifen schneiden. Das Einweichwasser in einem Topf beiseite stellen.<br \/>\n2. H\u00fchnerbrustfilet in etwa 2,5 cm gro\u00dfe W\u00fcrfel schneiden. Die gesch\u00e4lten M\u00f6hren zuerst in lange, d\u00fcnne Scheiben, dann in feine Streifen schneiden. Abura-age in der L\u00e4nge nach halbieren, dann schr\u00e4g ebenfalls in d\u00fcnne Streifen schneiden.<\/p>\n<p>3. Das Pilzeinweichwasser mit Zucker, 4 Essl\u00f6ffel Soja-Sauce und 2 Essl\u00f6ffel Sake zum Kochen bringen. Pilze und M\u00f6hren hineingeben und 5 Minuten kochen lassen, dann die Fleischw\u00fcrfel und abura-age zuf\u00fcgen. Alles weitere 3 bis 4 Minuten kochen, dann mit einem Schauml\u00f6ffel aus der Br\u00fche nehmen und beiseite stellen.<br \/>\n4. Die Br\u00fche mit dem restlichen Sake und der restlichen Soja-Sauce vermischen und mit Wasser auf 650 ml auff\u00fcllen. In einen Topf geben, Reis zuf\u00fcgen und bei starker Hitze einmal aufkochen lassen. Den Deckel auflegen und den Reis bei ganz schwacher Hitze etwa 20 bis 25 Minuten ausquellen lassen.<br \/>\n5. Gem\u00fcse mit einem Holzspatel vorsichtig unter den Reis heben. Ein gefaltetes K\u00fcchentuch unter den Deckel legen, damit der aufsteigende Dampf aufgesogen wird.
