Man l\u00e4\u00dft ihn 1-2 Stunden an einem k\u00fchlen Platz ruhen und rollt ihn so aus, da\u00df eine Tortenform damit ausgelegt werden kann. Inzwischen wird die in Ringe geschnittene Zwiebel im \u00d6l gebr\u00e4unt. Nachdem die Zwiebel herausgenommen wurde, gibt man die in gr\u00f6\u00dfere St\u00fccke geschnittenen Pilze hinein und d\u00fcnstet sie. Die Pilze werden auf einen Teller gegeben. Das Eiwei\u00df wird zu festem Schnee geschlagen und mit saurer Sahne verr\u00fchrt. In die mit Teig ausgelegte Form gibt man die gebr\u00e4unten Zwiebeln, darauf die Pilze, den Eischnee mit saurer Sahne und b\u00e4ckt alles.
