Das \u00d6l erhitzen und die Zwiebeln darin goldbraun braten. Das Kurkuma-Pulver, die Chillies und das Fleisch dazu geben und alles f\u00fcr ca. 3-4 Minuten braten. Nun gibt man auch die Tomate und das Wasser dazu und kocht alles bei schwacher Hitze, bis das Wasser verkocht ist. Die Masse aus der Pfanne nehmen und in Portionen aufteilen. Die Eigelbe von den Weissen trennen. Die Eiweisse gut durchschlagen. Nun die Eigelbe dazugeben und alles gut vermischen. Salz, Pfeffer und Koriander dazugeben und ebenfalls gut vermischen. Nun wird auch die Eiermasse in Portionen geteilt. Etwas \u00d6l in der Pfanne erhitzen und eine Portion der Eiermischung hineingeben. Das Ei sollte gleichm\u00e4ssig in der Pfanne zu einem Omelett zerlaufen. Wenn das Ei gestockt ist, wird eine Fleischportion darauf verteilt, das Omelett zur H\u00e4lfte zusammengeklappt und vorsichtig auf eine Servierplatte gelegt.
