Mit Salz vermischt zugedeckt ziehen lassen.<br \/>\nWammerl in kleine W\u00fcrfel schneiden. Zwiebel und Knoblauchzehe fein hacken. Wammerl bei schwacher Hitze unter h\u00e4ufigem Wenden braten, bis das Fett austritt. Zwiebel und Knoblauch zugeben und glasig braten. Essig und Wasser zugie\u00dfen und aufkochen. Br\u00fche untermischen und r\u00fchren, bis sich der Bratensatz gel\u00f6st hat.<br \/>\nK\u00fcmmel, Senf und \u00d6l mit einem Schneebesen unterr\u00fchren. Das Kraut mit dieser Marinade vermischen und zugedeckt bei Zimmertemperatur drei Stunden ziehen lassen.<br \/>\nPetersilie hacken und untermischen.
