Mascarpone mit Vanillemark, Puderzucker, Bittermandelaroma und Milch glatt r\u00fchren und kalt stellen. 100 g Schokolade in St\u00fccke brechen, fein hacken. 8 ofenfeste Kaffeetassen (Inhalt 200 ml) mit Butter d\u00fcnn ausfetten und auf ein Blech stellen.<br \/>\n2. Eier, 1 Prise Salz und den Zucker mit den Quirlen des Handr\u00fchrers 5-8 Minuten cremig-dicklich aufschlagen. Espressopulver und Mehl darauf sieben, mit einem Teigspatel gleichm\u00e4\u00dfig unterheben. Die Sahne,<br \/>\ngehackte Schokolade und Haseln\u00fcsse zugeben und unterheben. Die Masse in die Kaffeetassen f\u00fcllen. Im vorgeheizten Backofen bei 200 Grad auf der 2. Schiene von unten 18-20 Minuten (Gas 3, Umluft 180\u00b0C)<br \/>\nbacken. Etwas abk\u00fchlen lassen, nach etwa 5 Minuten vorsichtig aus den Tassen l\u00f6sen und auf Backpapier st\u00fcrzen. 10 Minuten mit der flachen Seite nach unten ruhen lassen, dann wieder wenden.<br \/>\n3. Die restliche Schokolade in St\u00fccke brechen und im hei\u00dfen Wasserbad schmelzen. Die fl\u00fcssige Kuvert\u00fcre d\u00fcnn auf den Cupcakes verteilen und mit einem Messer glatt streichen. Schokolade fest werden lassen. Von<br \/>\nder wei\u00dfen Schokolade mit einem Messer Sp\u00e4ne direkt auf die Cupcakes schaben. Cupcakes mit je 1 Klacks Mascarponecreme anrichten. Restliche Mascarponecreme dazureichen.
