Pfefferschoten putzen, l\u00e4ngs halbieren und entkernen. Die Schoten bei milder Hitze mit 1 TL Fenchelsaat in 2 EL Oliven\u00f6l 2-3 Minuten and\u00fcnsten und abk\u00fchlen lassen. Den K\u00e4se entrinden und in 5 mm dicke Scheiben schneiden.<br \/>\n2. Die Sehnen vom Schweinefilet mit einem scharfen Messer abl\u00f6sen. Jedes Filet der L\u00e4nge nach spiralenf\u00f6rmig aufschneiden und zu einem Rechteck auslegen. Mit Senf bestreichen und mit Pfefferschoten belegen. Zuerst den K\u00e4se, dann die Basilikumbl\u00e4tter so darauf legen, dass rundherum noch ein Rand von etwa 2 cm frei bleibt. Dann jedes Filet wie eine Roulade stramm aufrollen und mehrmals fest mit K\u00fcchengarn zusammenbinden.<br \/>\n3. Die Filets rundherum mit Meersalz, grob gemahlenem Pfeffer und der restlichen Fenchelsaat w\u00fcrzen. Das restliche \u00d6l in einem gro\u00dfen Br\u00e4ter erhitzen und die Filets darin rundherum bei starker Hitze goldbraun anbraten. Auf ein Blech legen und im vorgeheizten Ofen bei 180 Grad (Gas 2-3, Umluft 160 Grad) auf der 2. Schiene von unten 20- 25 Minuten zu Ende garen. Das Fleisch noch 5 Minuten ruhen lassen. Das Basilikum grob schneiden.
