Schnittk\u00e4se)<br \/>\n1 l Gem\u00fcsebr\u00fche<br \/>\n3 EL Zitronensaft<br \/>\n6 gro\u00df Basilikumbl\u00e4tter<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\n1. M\u00f6hren putzen. M\u00f6hren und Schalotten in 3 cm gro\u00dfe St\u00fccke schneiden und in die Saftpfanne des Backofens legen. 500 ml M\u00f6hrensaft. Chilischoten, Oregano und Rosmarin zugeben, leicht salzen. Im vorgeheizten Backofen bei 250 Grad (Gas 5. Umluft nicht empfehlenswert) auf der untersten Schiene 40-45 Minuten schmoren bis die Fl\u00fcssigkeit fast vollst\u00e4ndig verdampft ist, dabei ab und zu die<br \/>\nOfent\u00fcr \u00f6ffnen.<br \/>\n2. Pfefferschote putzen, sehr fein w\u00fcrfeln und mit Orangenschale und Oliven\u00f6l verr\u00fchren. Die Rinde vom K\u00e4se abschneiden, den K\u00e4se in sehr d\u00fcnne Scheiben schneiden und mit dem Orangen\u00f6l mischen.<br \/>\n3. Die M\u00f6hrenmischung leicht abk\u00fchlen lassen und in der K\u00fcchenmaschine feinst\u00fcckig (nicht musig!) p\u00fcrieren. Den restlichen M\u00f6hrensaft und die Gem\u00fcsebr\u00fche zugie\u00dfen und ca. 10 Minuten leise kochen lassen. Zitronensaft zugeben, eventuell nachsalzen. Basilikum kurz vor dem Servieren in feine Streifen schneiden und mit dem Scamorza mischen.
