Reis und rote Bohnen nacheinander in einem Sieb kalt absp\u00fclen und abtropfen lassen. Bacon fein w\u00fcrfeln. Knoblauch pellen und durchpressen. Chilischoten l\u00e4ngs aufschlitzen, von den Kernen befreien und fein hacken. Kokosfleisch in m\u00f6glichst lange, d\u00fcnne Sp\u00e4ne schneiden und in einer Pfanne ohne Fett goldbraun r\u00f6sten. Das \u00d6l in einer Pfanne erhitzen. Bacon, Knoblauch und Chili bei mittler Hitze unter Wenden acht bis zehn Minuten darin anschwitzen. Kokosnu\u00dfextrakt bei milder Hitze zum Kochen bringen, Reis einr\u00fchren, die Temperatur auf Stufe eins zur\u00fcckschalten und den Reis zugedeckt darin ausquellen lassen. Bacon Mischung, Bohnen und Tomaten (ohne Fl\u00fcssigkeit) unter den Reis heben. Eventuell salzen und auf Stufe eins nochmals erw\u00e4rmen.
