Mit einer Gefl\u00fcgelschere vom R\u00fccken her l\u00e4ngs aufschneiden, dabei R\u00fcckgrat und Hals entfernen, die V\u00f6gel flach auseinanderklappen (wie Schmetterlinge). Die unteren Knochen der Keulen sauber abschaben, dann in die Brusthaut stecken, die Wachteln mit der Hautseite nach unten auf einen Teller legen und gro\u00dfz\u00fcgig mit der Marinade bestreichen. Mit Klarsichtfolie abgedeckt<br \/>\n\u00fcber Nacht im K\u00fchlschrank marinieren.<br \/>\nWachteln aus der Marinade nehmen, trocknen und auf beiden Seiten salzen und pfeffern. Marinade beiseite stellen.<br \/>\nDas Oliven\u00f6l in einem gusseisernen Topf erhitzen und die Wachteln mit der Brustseite nach unten hineinlegen. Wacholderbeeren, Knoblauch, Thymian und Lorbeerbl\u00e4tter zuf\u00fcgen. Die Wachteln im<br \/>\nvorgeheizten Backofen bei 230\u00b0C etwa 10 Minuten anbraten und dabei \u00f6fter mit dem Bratfett begie\u00dfen, bei Bedarf seitlich etwas Wasser dazugie\u00dfen. Die Wachteln umdrehen und weitere 5 Minuten garen, dabei h\u00e4ufig \u00fcbergie\u00dfen. Die Zitronen- und Orangenst\u00fccke zuf\u00fcgen und zusammen mit den Oliven kurz darin erw\u00e4rmen.
