Schalotte, Knoblauch, 6 bis 8 Salbeibl\u00e4tter (oder gezupfte Thymianbl\u00e4ttchen) und ein etwa fingerlanges St\u00fcck d\u00fcnn abgeschnittene Zitronenschale fein hacken.<br \/>\nAlles mischen.<br \/>\nWachteln mit Salz und Pfeffer einreiben, mit der Kr\u00e4utermischung f\u00fcllen. Schenkel mit K\u00fcchengarn zusammenbinden.<br \/>\nZitrone auspressen. Tomaten abziehen und klein w\u00fcrfeln. Schinkenscheiben quer halbieren.<br \/>\n\u00d6l in einem Br\u00e4ter erhitzen. Wachteln darin rundherum braun anbraten. Auf jede Wachtelbrust 1 Salbeiblatt, oder 1 Thymianzweig legen und mit einer halbierten Schinkenscheibe bedecken. Tomatenw\u00fcrfel um die Wachteln verteilen, Br\u00fche erhitzen und mit dem Zitronensaft zugie\u00dfen.<br \/>\nWachteln zugedeckt im Backofen auf der mittleren Schiene 25 Minuten schmoren.
