Sellerie, M\u00f6hre und Lauch in hauchd\u00fcnne Streifen hobeln. Gut abtrocknen. Im Wok in 180 Grad hei\u00dfem \u00d6l schwimmend kro\u00df backen. Mit K\u00fcchenpapier abtupfen und beiseite stellen. Die Karpfenst\u00fccke zun\u00e4chst etwa zwei bis drei Minuten frittieren, dann herausheben und etwas abk\u00fchlen, ein zweites Mal f\u00fcr eine bis zwei Minuten backen, gut abtropfen, danach mit Salz und Pfeffer bestreuen. Im Wok, in dem man ein bis zwei E\u00dfl\u00f6ffel \u00d6l zur\u00fcckl\u00e4\u00dft, das Sesam\u00f6l erhitzen, Ingwer, Knoblauch sowie Chili zuf\u00fcgen. Mit Hoisinsauce, Sojasauce, Sherry oder Reiswein und H\u00fchnerbr\u00fche abl\u00f6schen und aufkochen.
