B. Picandou)<br \/>\n1 l \u00d6l zum Frittieren<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\n1. Ei, Mineralwasser, Wei\u00dfwein, Mehl, Paprika und eine gute Prise Salz zu einem glatten Teig verr\u00fchren und 20 Minuten kalt stellen. Die Enden vom Spargel abschneiden, den wei\u00dfen Spargel ganz, den gr\u00fcnen nur im unteren Drittel sch\u00e4len.<br \/>\n2. Avocados halbieren, entsteinen, sch\u00e4len, grob w\u00fcrfeln und sofort in einer Sch\u00fcssel mit dem Limettensaft mischen. Stielansatz der Tomaten keilf\u00f6rmig herausschneiden. Tomaten in Spalten schneiden. Zwiebel in feine Streifen schneiden. Kerbel grob hacken. Alles zu den Avocados geben und mit Oliven\u00f6l, Salz, Pfeffer und einer Prise Zucker mischen. Ziegenk\u00e4se grob zerbr\u00f6seln und vorsichtig unterheben.<br \/>\n3. \u00d6l auf 170 Grad erhitzen (ein Holzl\u00f6ffelstiel sollte darin sofort kleine Blasen werfen). Spargel portionsweise durch den Teig ziehen und im hei\u00dfen \u00d6l in 3-4 Minuten knusprig ausbacken.
