Die Radieschen putzen, waschen und in Scheiben schneiden. Die \u00c4pfel waschen, vierteln, entkernen, in Spalten schneiden und<br \/>\nsofort mit Zitronensaft betr\u00e4ufeln.<br \/>\nDie N\u00fcsse grob hacken. Den Eichblattsalat putzen, in grobe St\u00fccke zupfen, dann waschen und trocken schleudern. Die H\u00e4hnchenbrust in Streifen schneiden.<br \/>\nDie Butter erhitzen und das Fleisch darin bei mittlerer Hitze von allen Seiten drei bis vier Minuten braten und anschlie\u00dfend auf K\u00fcchenpapier abtropfen lassen.<br \/>\nDann die Waln\u00fcsse in der Pfanne kurz anr\u00f6sten. Aus Essig, Orangensaft, \u00d6l, Schnittlauch und Petersilie eine Salatso\u00dfe r\u00fchren, diese mit Salz und Pfeffer abschmecken. Die anger\u00f6steten N\u00fcsse zugeben. Den Eichblattsalat mit \u00c4pfeln, Radieschen, Kohlrabi, Karotten und H\u00e4hnchenfleisch anrichten.
