Kohlrabi sch\u00e4len und in St\u00e4bchen schneiden. Schalotten und Knoblauch in der H\u00e4lfte vom Oliven\u00f6l anduensten, Kohlrabi dazugeben. Mit 1\/4 vom Rahm und heisser Consomme abl\u00f6schen und fertig garen. Die Kohlrabi im Mixer p\u00fcrieren. Das P\u00fcree durch in Sieb streichen und mit Salz, Pfeffer und Muskat abschmecken. Die Gelatine auspressen, Petersilie in die Masse r\u00fchren und k\u00fchl stellen. Die restliche Rahm steif schlagen und unter die Masse ziehen.<br \/>\nVon den Lauchstangen etwa 10 cm lange gr\u00fcne Bl\u00e4tter abschneiden und in kochendem Salzwasser kurz blanchieren und mit Eiswasser abschrecken. Die Bl\u00e4tter auf einem K\u00fcchentuch ausbreiten und der L\u00e4nge nach halbieren. Die Langostinos oder Scampi ausl\u00f6sen, Darm entfernen, mit Salz und Pfeffer w\u00fcrzen (1 St\u00fcck pro Person f\u00fcr die   Garnitur zur\u00fcckbehalten) und in heissem Oliven\u00f6l ganz kurz anbraten. Eine Terrinenform mit wenig Butter ausstreichen und mit Klarsichtfolie \u00fcber den Rand hinaus auslegen, Folie glatt an die Form dr\u00fccken. Die Form der Breite nach mit den Lauchstreifen auskleiden, ebenfalls \u00fcber den Rand lappen lassen. Eine Schicht Kohlrabi-P\u00fcree einf\u00fcllen, dann eine Schicht Langostinos darauflegen. Wiederholen, die letzte Schicht P\u00fcree mit den Lauchbl\u00e4ttern bedecken. Mit der Klarsichtfolie gut verschliessen und zum Festwerden mindestens zwei Stunden in den K\u00fchlschrank stellen.<br \/>\nVor dem Servieren die restlichen Langostinos kross anbraten. Die Terrinenscheiben auf gemischtem Blattsalat an einer leichten Oliven\u00f6lsauce anrichten und mit je einem Langostino garnieren.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Zutaten 8
