Zuckerschoten und Fr\u00fchlingszwiebeln putzen. Das Gem\u00fcse in kochendem Salzwasser mit 1 EL Butter bissfest garen. In kaltem Wasser abschrecken und gut abtropfen lassen. M\u00f6hren und Kohlrabi nach Belieben klein schneiden.<br \/>\nEstragon, Petersilie und Kerbel fein hacken. In eine Sch\u00fcssel etwas Oliven\u00f6l geben und mit Salz und Pfeffer w\u00fcrzen, die Kr\u00e4uter und das gegarte Gem\u00fcse zugeben und gut durchmischen.<br \/>\nDen Spinat blanchieren, gut ausdr\u00fccken und fein hacken. Mit Ricotta und Eigelb vermischen und so viel Semmelbr\u00f6sel zugeben, dass die Masse bindet. Mit Salz, Pfeffer und Muskat abschmecken. Aus der Masse mit einem Teel\u00f6ffel Nocken formen und diese in siedendem Salzwasser gar ziehen lassen.<br \/>\nJoghurt mit etwas Salz und Pfeffer glatt r\u00fchren. Schnittlauch fein schneiden und untermischen.
