Angabe, k\u00fcchenfertig<br \/>\n6 Knoblauchzehen<br \/>\n4 Thai-Schalotten<br \/>\n6 rote und gr\u00fcne Chilischoten<br \/>\n1 Priese Salz (1)<br \/>\nSalz (2)<br \/>\n4 Basilikumzweige<br \/>\n1\/2 rote und gr\u00fcne Paprikaschote<br \/>\n8 EL Pflanzen\u00f6l; evtl. 1\/4 mehr<br \/>\n2 EL Austernsauce<br \/>\n2 EL Helle Sojasauce<br \/>\n1 EL Palmzucker<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\nDen Fisch gr\u00fcndlich waschen und trocken tupfen. Knoblauch und Schalotten sch\u00e4len, Chilischoten waschen und Stielans\u00e4tze entfernen. Alles zusammen mit Salz (1) im M\u00f6rser zersto\u00dfen. Die Basilikumzweige waschen, trocken tupfen die Bl\u00e4tter abzupfen und grob zerkleinern. Die Paprikaschoten waschen, Stielansatz und Samenstr\u00e4nge entfernen und die Schoten in mundgerechte St\u00fccke schneiden. \u00d6l im Wok erhitzen. Den Fisch salzen (2) und von beiden Seiten je nach Gr\u00f6\u00dfe 3 bis 6 Minuten braten. Herausnehmen und auf vorgew\u00e4rmten Tellern anrichten. Die im M\u00f6rser zerkleinerten Zutaten mit wenig \u00d6l im Wok anbraten. Paprikaschoten, Austernsauce, Sojasauce und Zucker dazugeben. Unter R\u00fchren etwas Wasser dazugie\u00dfen und einmal aufkochen lassen. Mit Basilikum abschmecken.
