Zerlassen Sie die Butter in einer Kasserolle, und schwitzen Sie darin die kleingehackte Zwiebel glasig. Geben Sie die Krabbenschalen hinzu und r\u00fchren gut durch. L\u00f6schen Sie ab mit Wei\u00dfwein und Cognac. Sobald der Sud aufgekocht ist, gie\u00dfen Sie die H\u00e4lfte des hei\u00dfen Wassers zu und lassen den Sud weitere 15 min kochen. W\u00e4hrenddessen geben Sie die Krebssuppenpaste in einen zweiten Topf, lassen die Paste schmelzen und l\u00f6schen mit einen Schuss Cognac ab. Seihen Sie den Krabbenschalenfond durch ein Sieb und r\u00fchren ihn in den Topf mit der Krebssuppenpaste. F\u00fcgen Sie die andere H\u00e4lfte des hei\u00dfen Wasser hinzu. Mit je einer Prise Salz und Zucker sowie wei\u00dfem Pfeffer aus der M\u00fchle abschmecken und weitere 10 min k\u00f6cheln lassen. Verschlagen Sie die Eigelb mit vier F\u00fcnfteln der Cr\u00e8me fra\u00eeche. R\u00fchren Sie diese Liaison unter die Suppe (Topf vom Feuer). Jetzt erst legen Sie das Krabbenfleisch ein.
