Jonagold)<br \/>\nca. 2,5 EL Brauner Zucker (nach Geschmack)<br \/>\n100 ml Trockener Weisswein<br \/>\n100 ml Apfelsaft<br \/>\n1 Vanilleschote, Mark<br \/>\n1\/2 TL Zimtpulver<br \/>\n2 Gew\u00fcrznelken<br \/>\n3 Scheiben Ingwer<br \/>\n1 Prise Chilipulver<br \/>\n1 TL Zitronenschaleabrieb (unbehandelte Frucht)<br \/>\n1 TL Orangenschaleabrieb (unbehandelte Frucht)<br \/>\n40 g Rosinen<br \/>\n1 Eigelb<br \/>\n2 EL Sahne<br \/>\nFl\u00fcssige Butter<br \/>\nMehl<br \/>\n<em>Hefeteig<\/em><br \/>\n125 ml Milch<br \/>\n21 g Hefe<br \/>\n300 g Mehl<br \/>\n50 g Zucker<br \/>\n2 Eigelb<br \/>\n1,5 EL Mandellik\u00f6r (je nach Geschmack)<br \/>\n1 Prise Salz<br \/>\n1\/2 Vanilleschote, Mark<br \/>\n1\/2 TL Zitronenschaleabrieb (unbehandelte Frucht)<br \/>\n50 g  Weiche Butter<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\nF\u00fcr den Hefeteig die Milch in einem Topf lauwarm (etwa 30\u00b0C) erhitzen. Die Hefe mit den Fingern zerbr\u00f6ckeln und in der Milch aufl\u00f6sen. Die Hefemilch mit dem Mehl, dem Zucker, den Eigelben, dem<br \/>\nLik\u00f6r, Salz, dem Vanillemark und der Zitronenschale mit den H\u00e4nden oder mit den Knethaken des Handr\u00fchrger\u00e4ts zu einem Teig verkneten.<br \/>\nDie weiche Butter hinzuf\u00fcgen und den Teig einige Minuten weiterkneten, bis er geschmeidig ist. Den Teig zu einer Kugel formen und in einer Sch\u00fcssel mit Frischhaltefolie bedeckt an einem warmen Ort etwa dreissig Minuten gehen lassen.<br \/>\nInzwischen f\u00fcr die F\u00fcllung die \u00c4pfel sch\u00e4len, vierteln, entkernen und in etwa 1 cm grosse W\u00fcrfel schneiden. Den Zucker in einer grossen Pfanne bei milder Hitze leicht karamellisieren lassen, die<br \/>\nApfelw\u00fcrfel zugeben, gut durchmischen. Mit dem Wein und dem Apfelsaft abl\u00f6schen, alles gut durchschwenken. Vanillemark, Zimt, Gew\u00fcrznelken, Ingwer, Chilipulver sowie Zitronen- und Orangenschale<br \/>\ndazugeben und einige Minuten mitd\u00fcnsten. Ingwer und Nelken wieder entfernen.<br \/>\nEtwa 1\/3 der Apfelw\u00fcrfel herausnehmen, p\u00fcrieren und mit den Rosinen unter die restlichen Apfelw\u00fcrfel mischen. Die Apfelf\u00fcllung gegebenenfalls noch mit etwas Zucker abschmecken.<br \/>\nDie Tarteform (28 cm) mit fl\u00fcssiger Butter bestreichen und mit Mehl best\u00e4uben. Den Teig halbieren und eine H\u00e4lfte auf der bemehlten Arbeitsfl\u00e4che d\u00fcnn zu einem Kreis ausrollen, der etwas gr\u00f6sser als<br \/>\ndie Tarteform ist. Die Form so damit auslegen, dass der Teigrand noch leicht \u00fcbersteht. Die Apfelf\u00fcllung gleichm\u00e4ssig auf dem Teig verteilen und den \u00fcberstehenden Rand \u00fcber die \u00c4pfel klappen.<br \/>\nDie zweite Teigh\u00e4lfte in Tarteformgr\u00f6sse ausrollen, auf die Apfelf\u00fcllung legen und den Rand leicht andr\u00fccken. Das Eigelb mit der Sahne verquirlen und den Teigdeckel damit bestreichen. Mit einer Gabel mehrmals einstechen und nach Belieben mit einer Schere oder einem kleinen scharfen Messer dekorativ einritzen.<br \/>\nDen Backofen auf 175\u00b0C vorheizen. Den Kuchen zehn Minuten gehen lassen, dann im Ofen auf der mittleren Schiene etwa 40 Minuten goldbraun backen.
