Das Eiwei\u00df steif schlagen. Eigelb schaumig r\u00fchren (lange r\u00fchren, bis sich das Volumen verdoppelt hat und beige-wei\u00df aussieht). Den Zucker zugeben und nochmals r\u00fchren. Das Backpulver und den Vanillezucker zum Schlu\u00df zugeben.Das Mehl und das Mondamin sieben und unterheben, anschlie\u00dfend das Eiwei\u00df unterheben.<br \/>\nDen Boden der Backform gut fetten (aber nicht den Rand!) Teig zugeben. Im Backofen bei 180 \u00b0C \/ Gas 2 &#8211; 3 15 &#8211; 20 min backen.<br \/>\nBiskuit auf ein gezuckertes, sauberes K\u00fcchenhandtuch st\u00fcrzen und noch hei\u00df zur Biskuitrolle aufwickeln.<\/p>\n<p><em>K\u00e4sesahne (reicht f\u00fcr 2 Rollen)<\/em><br \/>\nDie Eier trennen. Das Eiwei\u00df zu Schnee schlagen, das Eigelb schaumig  r\u00fchren. Die Zitrone abreiben und anschlie\u00dfend auspressen. Den Saft, die Schale, den Zucker unter das Eigelb r\u00fchren und den Quark zugeben.<br \/>\nDie Gelatine nach der Packungsangabe zubereiten und langsam unter die Quarkmasse geben.<br \/>\nDie Sahne steif schlagen und mit dem Eischnee unter die Quarkmasse vorsichtig unterheben.<br \/>\nBiskuitrolle aus dem K\u00fcchenhandtuch l\u00f6sen und mit der K\u00e4sesahne f\u00fcllen.
