Lachsfilets kalt absp\u00fclen, mit K\u00fcchenkrepp trockentupfen. Lauchstangen halbieren, Wurzeln und ledrige Bl\u00e4tter abschneiden. Lauch gr\u00fcndlich unter flie\u00dfendem Wasser absp\u00fclen, trockensch\u00fctteln. 8 zartgr\u00fcne Bl\u00e4tter vorsichtig abtrennen. Lachsfilets mit Salz und Pfeffer bestreuen und jedes Filet in 2 Lauchbl\u00e4tter wickeln. Die P\u00e4ckchen mit Zahnstochern fixieren.<br \/>\n2. Orangen absp\u00fclen und die Schale von 1 1\/2 Orangen spiralf\u00f6rmig abschneiden. Die restliche Schale in ganz feine Julienne-Streifchen schneiden und beiseite legen. Orangen-Spiralen mit Wasser in einen gro\u00dfen Topf geben, die Lachsst\u00fccke in den Siebeinsatz dar\u00fcber legen. 15 Minuten bei guter Mittelhitze im geschlossenen Topf garen.<br \/>\n3. Den restlichen Lauch in feine Streifchen schneiden, einige zartgr\u00fcne zum Garnieren beiseite legen. 20 g Butter in einer Kasserolle erhitzen, Lauch darin glasig braten. Orangen auspressen und Lauch mit dem Saft abl\u00f6schen. Sauce mit Salz, Pfeffer, Zitronengras und Zucker abschmecken und 5 Minuten einkochenlassen.<br \/>\n4. Mehl mit der restlichen Butter verkneten, in die Sauce r\u00fchren, bis sie s\u00e4mig ist. Auf vorgew\u00e4rmten Tellern zu den Lauchwickeln servieren, mit Orangen und Lauchstreifchen und rosa Pfeffer garnieren. Dazu Basmati-Reis mit ger\u00f6steten Mandelstiften, als Getr\u00e4nk ein trockener Ros\u00e9 aus dem Bordeaux-Gebiet.<br \/>\nTip: Wer das Gericht noch pikanter mag, br\u00e4t erst das Zitronengras in der sch\u00e4umenden Butter an, gibt dann den Lauch dazu und l\u00f6scht mit dem Orangensaft ab. Die Zuckermenge richtet sich nach der S\u00e4ure der Orangen. Gut zu dem Gericht pa\u00dft auch eine Prise Cayennepfeffer.
