Das Eigelb wird passiert und die H\u00e4lfte davon mit s\u00fc\u00dfer Sahne, Senf Sardellenpaste, Salz sowie einer Prise Zucker verr\u00fchrt. Damit werden die Eier gef\u00fcllt. Man kann in die F\u00fcllung auch zerkleinerte Bratenreste geben. Auf einer l\u00e4nglichen Platte wird aus dem franz\u00f6sischen Salat ein Sockel bereitet und die Eier daraufgestellt. Aus dem gebliebenen Eigelb wird mit s\u00fc\u00dfer Sahne eine Tartarsosse bereitet und die Eier sowie der Salat damit \u00fcbergossen.
