M\u00f6hren,Kohlrabi,Brokkoli,Paprika<br \/>\n1 Gem\u00fcsezwiebel<br \/>\n1 Bund frische, glatte Petersilie<br \/>\neinige Korianderbl\u00e4ttchen<br \/>\n500 g Sahnejoghurt<br \/>\n5 EL gehackte Mandeln<br \/>\n3 Eier<br \/>\n2 EL Oliven\u00f6l<br \/>\nSalz<br \/>\nPfeffer<br \/>\n5 EL Mehl<\/p>\n<p><strong>Zubereitung<\/strong><br \/>\nDas Gem\u00fcse putzen, waschen und in mundgerechte St\u00fccke zerteilen. Die Zwiebeln sch\u00e4len und klein w\u00fcrfeln. Das \u00d6l in einem gro\u00dfen Topf erhitzen, die Zwiebeln darin goldgelb anbraten. Festes Gem\u00fcse mit langer Garzeit (wie Blumenkohl, Brokkolistiel, M\u00f6hren) dazugeben und kurz anbraten. Ganz wenig Wasser dazugie\u00dfen, das Gem\u00fcse salzen, pfeffern und zudeckt bei schwacher Hitze schmoren. Dabei nach und nach je nach ben\u00f6tigter Garzeit das \u00fcbrige Gem\u00fcse dazugeben. Das Gem\u00fcse soll nur knapp gar werden. Eventuell noch etwas Wasser angie\u00dfen,wenn der Topfdeckel nicht ganz fest schlie\u00dft.<br \/>\nDen Backofen auf 200 Grad vorheizen. Inzwischen die Kr\u00e4uter kurz abbrausen, trocken tupfen und fein hacken. Sie mit dem Joghurt, dem Mehl und den Mandel verr\u00fchren. Die Eier trennen, die Eigelbe unter den Joghurt r\u00fchren. Die Eiwei\u00dfe zu steifem Schnee schlagen und unterheben. Alles salzen und pfeffern.<br \/>\nDas Gem\u00fcse in eine gro\u00dfe, flache Auflaufform f\u00fcllen und den Joghurtschnee dar\u00fcber verteilen. Den Auflauf im Ofen auf der zweiten Einschubleiste von unten etwa 25 Minuten backen.<br \/>\nTip: Wenn Sie den Joghurt zum Kochen, beispielsweise zum \u00dcberbacken von Aufl\u00e4ufen oder zum Andicken von Saucen verwenden m\u00f6chten, mu\u00df er stets mit etwas Mehl anger\u00fchrt werden, damit er nicht ausflockt.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Zutaten 1 kg gemischtes Gem\u00fcse nach Belieben, z.B.
