Die Entenbrust absp\u00fclen und trockentupfen, die Haut rautenf\u00f6rmig einschneiden.<br \/>\n2. Eine Orange filieren, die andere Orange auspressen.<br \/>\n3. Den Fruchtsaft mit Honig, Pfeffer und Salz verr\u00fchren, die Entenbrust damit marinieren, 15 Minuten ziehen lassen.<br \/>\n4. Die Entenbrust im Backofen 10-15 Minuten grillen, zwischendurch mit der restlichen Marinade betr\u00e4ufeln. Den Bratensaft in einer Fettpfanne auffangen.<br \/>\n5. In der Zwischenzeit den Wirsing putzen, waschen, vierteln, den Strunk entfernen und in Streifen schneiden.<br \/>\n6. Die Zwiebel sch\u00e4len, fein hacken, in der Butter glasig d\u00fcnsten. Die Wirsingstreifen dazugeben, kurz and\u00fcnsten und mit der Gem\u00fcsebr\u00fche angie\u00dfen. Bei milder Hitze 10 Minuten garen. Mit Muskat und Pfeffer w\u00fcrzen.<br \/>\n7. Die gegrillte Entenbrust herausnehmen und warm stellen. Den Bratensaft in eine Pfanne gie\u00dfen, die Orangenfilets dazugeben, etwas eink\u00f6cheln lassen und nochmals abschmecken.<br \/>\n8. Die Entenbrust, das Wirsinggem\u00fcse und die Salzkartoffeln auf Tellern anrichten. Die Orangensauce \u00fcber die Entenbrust gie\u00dfen, die Petersilie \u00fcber die Salzkartoffeln streuen, das Ganze servieren.<br \/>\n9.
