Das Fleisch soll wie gehackt wirken, dennoch sichtbar kleine St\u00fcckchen aufweisen. In einer Sch\u00fcssel mit Salz, Zucker, je 1 El Sojasauce, Sherry, 1 Tl Sesam\u00f6l und der St\u00e4rke gr\u00fcndlich vermengen. Im Wok oder einer Pfanne das restliche Sesam\u00f6l mit dem neutralen \u00d6l erhitzen. Die Mandeln darin anr\u00f6sten, herausheben und grob hacken. Das Fleisch in der Pfanne rasch unter R\u00fchren anbraten, dabei sofort Ingwer, Knoblauch und das Wei\u00dfe der Fr\u00fchlingszwiebeln hinzuf\u00fcgen. Die restliche Sojasauce, Sherry sowie Austernsauce angie\u00dfen. 1 Minute unter R\u00fchren aufkochen, dabei das Gr\u00fcn der Fr\u00fchlingszwiebeln und die Mandeln unterr\u00fchren. Abschmecken und auf einer Platte anrichten. Man serviert dazu die Salatbl\u00e4tter und eine Sauce, aus Essig, Wasser, Zucker und Sojasauce anger\u00fchrt. Jeder Gast packt sich eine bissengro\u00dfe Portion jeweils in ein Salatblatt, tr\u00e4ufelt etwas Sauce obendrauf und i\u00dft das P\u00e4ckchen aus der
