Im stark gesalzenen Wasser 2-4 min blanchieren und in Eiswasser abschrecken. Knoblauch sch\u00e4len und klein schneiden. Die Poulardenbrust schnetzeln und mit dem Knoblauch braten, dabei mit Salz und Pfeffer w\u00fcrzen. Poularden in eine Sch\u00fcssel geben und mit Sambal marinieren, 5-10 Minuten ziehen lassen. Kaffir-Limettenbl\u00e4tter und Basilikum ganz fein schneiden und unter die Poularde heben. Jetzt den Spargel zugeben und den Salat mit Limettensaft vollenden.
