Am Vortag f\u00fcr die Panna cotta die Gelantine in kaltem Wasser einweichen. Die Vanilleschote aufschneiden und das Mark herauskratzen. Sahne, Zucker, Amaretto, Vanillemark und die Schote in einem Topf mischen und aufkochen. Von der Herdplatte nehmen. Die Gelantine ausdr\u00fccken und in der Sahne aufl\u00f6sen. Die Sahne durch ein Haarsieb gie\u00dfen.<br \/>\n2. Die Sahne etwa 20 Minuten abk\u00fchlen lassen, dann die geriebene Orangenschale und die Cr\u00e8me fraiche unterr\u00fchren. In F\u00f6rmchen von 125 ml Inhalt f\u00fcllen und \u00fcber Nacht im K\u00fchlschrank kalt stellen.<br \/>\n3. F\u00fcr die Sauce die Gelantine in kaltem Wasser einweichen. Den Honig in einem Topf zum Kochen bringen und leicht karamelisieren, den Orangensaft hinzuf\u00fcgen und auf die H\u00e4lfte einkochen. Von der Kochstelle nehmen und die ausgedr\u00fcckte Gelantine darin aufl\u00f6sen. Anschlie\u00dfend die eiskalte Butter einschwenken und die Sauce im Eiswasserbad kalt r\u00fchren.<br \/>\n4. Die Melonen halbieren und entkernen. Mit einem Kugelausstecher das Fruchtfleisch ausstechen und mit Minze, Cointreau und Puderzucker 30 Minuten im K\u00fchlschrank marinieren.<br \/>\n5. Zum Servieren die F\u00f6rmchen kurz in hei\u00dfes Wasser tauchen und die Cr\u00e8me auf die Teller st\u00fcrzen.
