Die Masse wird durchpassiert und mit schaumig geschlagenem Ei verr\u00fchrt und etwas Kognak zugegeben.<br \/>Die gleichgro\u00dfen Pilzk\u00f6pfe werden in Salzwasser, dem Zitronensaft zugesetzt wurde, gekocht, danach abgetrocknet und mit der Leberf\u00fcllung je zwei Pilzk\u00f6pfe zusammengeklebt. Die gef\u00fcllten Pilze werden in Mehl, Ei und Semmelbr\u00f6seln gew\u00e4lzt und in hei\u00dfem \u00d6l gebacken. Man serviert sie mit brauner So\u00dfe.<br \/>Zur So\u00dfe werden die zerkleinerte Knochen das Suppengr\u00fcn mit wenig Bed\u00fcnsteten Zwiebeln gebr\u00e4unt. Man gibt Sellerie, Pilze (die Stiele), die Knoblauchzehe, Salz, gemahlenen Pfeffer, Mehl, Tomatenp\u00fcree, Rotwein und in \u00d6l gebr\u00e4unten Zucker hinzu und kocht es auf kleiner Flamme.
