Den Orangensaft und 100 ml Wasser zugie\u00dfen. Die Linsen bei milder Hitze zugedeckt 13 &#8211; 17 Minuten garen und anschlie\u00dfend abk\u00fchlen lassen.<br \/>\nDen Himbeeressig und 4 EL \u00d6l unter die Linsen mischen, mit Salz, Pfeffer und etwas Zucker w\u00fcrzen.<br \/>\nF\u00fcr die Sauce den Senf mit dem Eigelb verr\u00fchren. Das restliche \u00d6l nach und nach einr\u00fchren.  Den Wei\u00dfweinessig unterr\u00fchren. Senfsauce mit Salz, einer Prise Zucker und Pfeffer w\u00fcrzen.<br \/>\nDen Schnittlauch in feine R\u00f6llchen  schneiden  und  unter  die Linsen mischen. Den Linsensalat und die Kalbszunge auf Portionstellern anrichten, mit Senfsauce begie\u00dfen und mit etwas Brunnenkresse garniert servieren.
