Den Teig auf der bemehlten Arbeitsfl\u00e4che kneten und schlagen, bis er glatt und elastisch ist. Den Hefeball, wenn er an die Oberfl\u00e4che des Wassers gestiegen ist und sein Volumen fast verdoppelt hat, abtropfen lassen und sorgf\u00e4ltig mit dem Teig vermengen. Den Teig zu einem Ball formen und in eine bemehlte Sch\u00fcssel legen, zudecken und \u00fcber Nacht k\u00fchl ruhen lassen. Den Teig auf ein bemehltes Brett legen und zu einem l\u00e4nglichen Rechteck ausrollen. Die restliche Butter zu einer flachen Platte formen und in die Mitte des Teiges legen. 1\/3 des Teiges \u00fcber die Butter falten und den Rest so dar\u00fcber schlagen, dass der Teig in drei Schichten \u00fcbereinander liegt. Das Teigpaket um 90\u00b0 drehen, in Richtung der offenen R\u00e4nder ausrollen, wie zuvor falten, umdrehen und nochmals ausrollen. Den Teig wieder falten, in ein Tuch wickeln und 15 Minuten k\u00fchl ruhen lassen. Aufrollen und zusammenfalten, zweimal wiederholen. Den Teig zu einem Rechteck ausrollen (ca. 1\/3 cm dick). Der L\u00e4nge nach teilen und jeden Streifen in Dreiecke schneiden. Die Dreiecke von der breitesten Seite her aufrollen, zu Halbmonden biegen und auf ein bemehltes Backblech legen. Mit einem Tuch zudecken und 15-20 Minuten an einem warmen Ort stehen lassen. Die H\u00f6rnchen mit geschlagenem Ei bepinseln und im vorgeheizten Ofen 5 Minuten bei 220\u00b0C backen.
