Die Zutaten f\u00fcr die Marinade die Sojasauce den Sherry den gemahlenen Ingwer den Zucker und eine pn Salz in einer Sch\u00fcssel verr\u00fchren und die Entenbruststreifen 1 Stunde marinieren. Knoblauch sch\u00e4len und in feine sl schneiden. Das \u00d6l im wok, erhitzen und zuerst den Knoblauch darin anbraten dann das Entenfleisch mit der Marinade hineingeben und ca. 2 Minuten pfannenr\u00fchren bis das Fleisch hell wird herausnehmen und warmstellen. Das \u00d6l im wok, lassen. Die Schalotten sch\u00e4len und w\u00fcrfeln. Den Sellerie putzen waschen und in Streifen schneiden auch das Gr\u00fcn. Die Schalotten und den Sellerie im Wok, 2 Minuten pfannenr\u00fchren. Die Ananas in W\u00fcrfel schneiden. Die Melone von den Kernen befreien und das Fruchtfleisch w\u00fcrfeln. Die Ananas- und Melonenw\u00fcrfel sowie Lychees zum Gem\u00fcse geben und unter R\u00fchren aufkochen lassen. Mit der Sojasauce der Hoisinsauce und der Gefl\u00fcgelbr\u00fche aufgiessen. Das Tomatenmark den Essig den Zucker und die in etwas Wasser anger\u00fchrte Speisest\u00e4rke dazugeben und aufkochen lassen bis die Sauce s\u00e4mig wird. Mit Salz und frisch gemahlenem Pfeffer abschmecken.
