Die Rinde im Mixer zerkleinern und f\u00fcr sp\u00e4ter (Rindenbr\u00f6sel zum Fertigstellen) beiseitestellen.<br \/>\nButter, Puderzucker, Eier, Eigelb, Zitronenschale, Zitronensaft und die H\u00e4lfte des Vanillemarks schaumig aufschlagen, die Brotw\u00fcrfel untermischen, mit dem Holzl\u00f6ffel gut durchmischen. Den Quark eventuell durch ein Sieb streichen und unter die Masse geben, gut durchmischen, nur leicht kneten: die Masse soll luftig bleiben. Die Milch mit der Zucker und dem restlichen ausgekratzten Vanillemark und der Vanilleschote erhitzen.<br \/>\nAus der Masse mit einem L\u00f6ffel und feuchten H\u00e4nden Kn\u00f6del formen und diese in der Vanillemilch ca. f\u00fcnfzehn Minuten pochieren. In einer Pfanne die Rindenbr\u00f6sel mit der Zucker und der Butter karamellisieren und \u00fcber die angerichteten Kn\u00f6del geben. (Oder die Kn\u00f6del direkt in der Pfanne mit den Rindenbr\u00f6seln anschwenken.)<br \/>\nDazu marinierte Orangenfilets reichen. <\/p>\n<p>[1] Sehr wichtig, der Quark muss moeglichst trocken sein!
